La Margarita had been doing a good job producing special processing with depth, not just single dimensional flavour profile. This time, they created a coffee with notes of muscat grape first in the cup, then citrus, raisin, plum and brown sugar alongside it.

The technical bit

Raisin anaerobic washed is the lot’s deliberate fruit-forward frame: fresh cherries turned into raisin form by dehydrating it, the coffee is then fermented anaerobically so that the ferment juice are re-absorbed into the dehydrated cherries (and thus stay in the flesh and gets into the seed). It is then dried under the sun with all skins and flesh removed, which constitute the washed process. Think of it as a very specific route to a cup with character.
