This is an Heirloom lot from a very high altitude of 2,200–2,300 m, going through a double anaerobic washed process: two sealed anaerobic stages, then dried under the sun without mucilage or skin attached to the seeds (all removed).

Washed Yirgacheffe is commonly associated with bright, clean floral and citrus top notes, so this lot’s rose and orange notes have familiar regional company while the fermentation intensifies the fruitiness.

The beans may look a little mixed. That is normal.

Please note that uneven bean colour is normal for this double anaerobic washed lot because of the uneven nature of static immersion of coffee seeds in the fermentation liquid. So don't worry.
