We are thrilled to have gotten our hands on this amazing sidra bourbon from Finca El Diviso, which underwent one of the most complicated processing methods ever, resulting in a very vibrant and juicy cup with great passionfruit acidity and floral notes!
Using only fully ripe cherries, this coffee went through two fermentation stages: the first stage is 60 hours of open-air oxidation, followed by 48 hours of fermentation in a closed can; the second stage involves another 24 hours of fermentation submerged in water, then a thermal shock procedure.
After two stages of fermentation, the whole cherries are mechanically dried in 24 hours to reduce rot risks by hastening the drying process before they are dried naturally under the sun.
