Grown at the Canet Estate in Costa Rica's high-altitude Tarrazu region, the Musician Series carries a quiet reputation among specialty coffee drinkers. Each coffee in the series is named after a classical composer, a nod to the estate's thoughtful, almost methodical approach to coffee production.
What truly sets the series apart is its Raisin Honey process. Ripe cherries are slowly sun-dried until they begin to resemble raisins, concentrating their sugars before being pulped. The mucilage is left intact, allowing fermentation to continue in a more controlled, deliberate way — shaping a cup that feels layered and intentional rather than showy.

The Hamasho processing station operated by Daye Bensa Coffee sits in the Hamasho village (the name means serpent in the local Sidamic language), perched between 2000-2300masl. It is one of Ethiopia’s most revered coffee landscapes, where cool mountain air and slow cherry maturation converge to shape profoundly expressive beans.
For this slow-dry washed expression, we detected white floral aromatics upon grinding the beans and smelling the brew, followed by mellow citrus and grapefruit acidity supported by a good structure, ending with hints of vanilla and a graceful black tea undertone that ties it all together.
It’s not loud, but elegant and refined throughout with remarkable balance.
More About Daye Bensa
If you've been to Daye Bensa Coffee's headquarter in Addis Ababa, you'd understand the scale of its economic stature among the Ethiopian coffee exporter. Founded in 1996 by brothers Asefa and Mulugeta Dukamo, Daye Bensa began with one modest washing station and a big dream: to lift coffee quality and farming livelihoods across Sidama. Today, it operates dozens of washing stations, multiple dry mills, and collaborates closely with hundreds of smallholder farmers who bring their ripe cherries to Hamasho’s processing station.
Along the way, Daye Bensa’s commitment to excellence has earned international recognition, including multiple high placements in the prestigious Ethiopia Cup of Excellence, with coffees placing 8th in 2021 and an impressive 2nd place in 2022. That pedigree filters through every lot, Hamasho included.

Few coffee regions carry the weight of history quite like Antigua, and few farms embody it as gracefully as Bella Carmona. Established over a century ago (what!) and stewarded by the Zelaya family for four generations, this estate sits on the southern slopes of Volcán de Agua, where elevations of 1,500–1,800 metres, cool nights, and mineral-rich volcanic soils quietly do most of the heavy lifting.
Today, the legacy continues under Luis Pedro Zelaya, a fourth-generation producer and miller, whose meticulous approach at the Bella Vista mill blends tradition with modern quality discipline. In short? Think heritage, but with calibrated fermentation tanks and a very sharp eye for detail.
About This Geisha
For this washed Geisha, only perfectly ripe cherries are selectively harvested, gently fermented, and carefully dried to preserve clarity. While the Antigua terroir provides structure and vibrancy, the Geisha varietal brings its classic elegance to the table.
In the cup, expect lifted notes of bergamot and citrus, expressive florals, and a refined melon-like sweetness, all wrapped up in a lingering honeyed finish.
Classic, composed, and still very capable of stealing the spotlight, Bella Carmona knows exactly what they are doing with the poise of an Old Guard.

The "Buncho" Station (aka “The Coffee Tree” 🌱)
Welcome to Buncho, Daye Bensa’s station in Shantawene, Bensa (Sidama), named after the Sidama word for a coffee tree! Founded in 2018, Buncho sits beside Gatta Farm and a waterfall, collecting ripe cherry from a network of smallholders across Shantawene, Bombe, and neighboring villages. The station runs 150 raised beds and 12 washing tanks, processing tons over tons of coffees with various processing methods.
The Buncho station sits around 2,000-2,200m, while contributing farms climb even higher (many are higher than 2,300m). That elevation, with cool nights, strong diurnal swings, slows cherry ripening time in comparison to hotter areas at lower altitudes. A slower maturation in fruition concentrates sugars, and preserves those tropical and citrus aromatics that many love.
Decoding 74158
Varietal 74158, also known as Walega, is a cultivar developed by Ethiopia’s Jimma Agricultural Research Center (JARC). It originated from a wild mother tree in the Metu-Bishari area and was released in the 1970s, with the primary objective to address coffee leaf rust and improve farmer resilience Like most of JARC’s 1970s “74-series” selections, such as 74110, 74112, and so on.
Buried under the "heirloom" umbrella term, 74158 wasn’t popular until recent years because it was originally valued for disease resistance. Thanks to advancement in coffee processing methods and producing technologies, the coffee producers finally have the infrastructure and a matured market to showcase its unique cup qualities.

Can you imagine a coffee smelling exactly like tiramisu? No matter the answer, you should definitely try this crazy special processed coffee from Finca San Jose that makes you feel like you're drinking tiramisu!
Here's how it is created: the castillos from Finca San Jose are dry-tumbled in amaretto barrels for 30 days to soak up all the aromas before being dried after mechanical de-pulping.
That's how a sensory illusion of tiramisu is created when profiled to highlight notes of chocolate, nuts and baked goods (biscuits), since tiramisu is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar and mascarpone, and finally flavoured with cocoa; a common variant also involves using alcohol, such as Marsala wine, amaretto or a coffee-based liqueur.

Looking for a good ol’ Ethiopian natural coffee with comfortable fruitiness that leans towards citrus acidity? The current natural processed heirlooms we have from Tirtira Goyo might just be what you're looking for!
Tirtira Goyo locates at 400 km in the south of Addis Ababa within Hambela Wamena woreda in the West Guji zone. Washing stations built in the kebele are often named after the name of the place itself, where “Tirtira Goyo” actually means the bold and courageous Goyo, a farmer known for his tenacity who lived in the village a long time ago.
Most of the coffee trees around Tirtira Goyo are grown together with a vast variety of other crops which help with balancing the surrounding soil. Among all other crops, coffee plants benefit particularly from the presence of Enset (Ensete Ventricosum, also known as Ethiopian banana or fake banana), because its large trunk serves as a natural water reservoir which helps to moisten the soils during dry seasons.
